Grilling over peach wood creates a special flavor for all our broiled and smoked menu items. We have found, over years of perfecting our skills and techniques, that cooking over peach wood (unlike oak, hickory, or mesquite, which can leave a bitter or wood aftertaste) adds a very mellow hint of smoke flavor, not ever overpowering. |
